Dear community,

Well, last week was amazing at the OncoSummit. So much learnt. And again realizing how nurtition is such a key element to a healthy lifestyle. The amazing thing is that not only do they have talks about the key pillars of lifestyle, nutrition, exercise and mind, as they also walk to talk and fed us with amazing mostly plant-based meals. And oddly enough I noticed a difference in JUST 2 days of eating mostly plant-based as my blood pressure became much more stable. Was it a fluke? I do not believe so.


So, where will this week’s menu take you?

I was invited to be part of a cool new project the township of Ajuda where I live this coming Saturday, meaning tomorrow! It is called Ajuda Pop-Up and each week it will have a different theme. So as this week it has to do with Korea, I decided one of the meals for this week will be Korean influenced


🇵🇹 MENU 1 – Flavors of the Land

🥣 Creamy Leek Soup

🍋 Roasted chicken with Lemon and Garden Herbs served with Shredded Carrot Rice

A menu that is starting to feel like Spring time.

A comforting menu that brings together rustic, homely flavours in a simple yet refined way. It begins with a creamy leek soup, smooth and warming, designed to evoke the feeling of traditional countryside cooking. The main dish features oven-roasted chicken infused with fresh lemon and garden herbs, cooked until tender and golden, and served alongside fluffy shredded carrot rice that adds a light sweetness and aroma

A Greek-inspired fresh table designed around light, nourishing flavours and simple, honest ingredients. It begins with a crisp Greek salad made from ripe tomatoes, cucumber, olives, and feta, bringing brightness and freshness to the plate. The main dish features herb and lemon fish fillets, gently seasoned to enhance their natural flavour and served as a clean, satisfying centrepiece.
